Celosia Plumosa White. Unlike amaranth it is not edible. It comes in colors like carmine red yellow white.

The celosia has grey ish to green striated branches that contrast the inflorescences in the best way. They are oval in shape with pointed edges. Plumosa flowers are bushy and look like flames. There are three sub species that are popular.
